SIXTEENTH CENTURY


 Official Recognition of Pastry Making As a Profession

Pastry making was already a highly developed art when Charles IX established the first pastry maker’s guild in 1566. At the same time, a system of apprenticeship and a means of testing expertise through examinations were implemented; these tests included the preparation of an elaborate work.
This period also marked the arrival of the first ice creams, pate a choux and ‘pithiviers’. The biscuit, a type of sponge cake, played an important role in sea exploration because it kept well, providing weeks of nourishment for the crews.
